After the winter thaw, we look to the fresh new season of produce in Central Otago to extract ripe, crisp and clean flavours. The extraction of floral and crisp stone fruit elements from the early new harvest is concentrated bringing to note some lesser known flavours from our favourite fruit and botanicals.
